4 fish fillets 1/4 cup milk 1 cup cracker crumbs or bread crumbs 2 TBS flour salt and pepper to taste
Mix together crumbs, flour, and salt and pepper. Dip fish fillets in milk then coat in crumb mixture. Heat frying pan with 3 TBS butter and 3 TBS oil. Fry fillets lightly, just enough to gently brown. Remove fillets from frying pan and place in a casserole dish. In the frying pan place 1 medium onion, sliced. Saute gently to soften then place onion on top of the fillets in the casserole. Add juice of 1 lemon, then pour on 1/2 cup cream. Cover and bake at 300 F for 1 hour.
