Carrot Cake

2 cups flour
2 cups sugar
1/4 tsp salt
2 tsp soda
1 cup oil
2 tsp cinnamon
1 tsp allspice
4 eggs
3 cups finely grated carrots

Sift dry ingredients into large bowl. Add oil and stir well; this mixture will be very thick. Add eggs one at a time, mixing well after each addition. Add carrots; blend well. Pour batter into a greased 9″x13″ or 2 layer cake pans and spread evenly. Bake at 350 degrees F for 40 to 50 minutes. Frost when cool with Creamy Cheese Frosting.


Creamy Cheese Frosting

1/4 cup margerine or butter
2 cups sifted icing sugar
1/4 cup chopped walnuts, optional
4 ounces cream cheese
1 tsp vanilla

Cream together margerine and cheese. Add icing sugar and beat until light and fluffy. Add vanilla. Frost cake and sprinkle top with chopped walnuts, if desired.
