Baked Northern Pike

4 fish fillets
1/4 cup milk
1 cup cracker or bread crumbs
2 Tbs flour
salt and pepper to taste
3 Tbs butter
3 Tbs oil
1 medium onion, sliced
juice of 1 lemon
1/2 cup cream

Mix together crumbs, flour, and salt and pepper. Dip fish fillets in milk then coat in crumb mixture. Heat frying pan with 3 Tbs butter and 3 Tbs oil. Fry fillets lightly, just enough to gently brown. Remove fillets from frying pan and place in a casserole dish. In frying pan, place sliced onion and saute gently to soften. Place onion on top of the fillets in the casserole dish. Add lemon juice, then pour on cream. Cover and bake at 300 F for 1 hour.
